There is one thing I love about the colder weather, it means I can make more MASH! There is something so seriously comforting about it and since I bought my wonderful potato ricer my mash experience has been enhanced 10 fold! This nifty little tool is not expensive (mine was about $30) but so worth the investment as it totally transforms any mashable vege into a smooth creamy heavenly mash.
My favourite is of course good floury Agria potatoes, but I also love to use the ricer to make mash with pumpkin, kumara or celeriac. Actually, pumpkin and kumara mashed together is pretty special too!You can of course jazz mash up with any number of additions, my personal favourite is to simply add warmed milk and a knob of butter, with plenty of salt and freshly ground pepper. Snipped chives and sour cream are another favourite as is lots of grated parmesan stirred through.
The amount of milk you use depends on how creamy you like your mash, I like mine quite creamy so would use about a cup to about 1 kg potatoes. It must be warmed though otherwise your mash will go cold too quickly.
